From the University of Texas, this podcast goes through the steps of subscribing to podcasts through iTunes. Sometimes the simplest ideas are the ones we need.
And here's info on how UT is podcasting through Blackboard utilizing iTunes. My assumption is that the university has subscribed to the iTunes university package.

Georgia College and State University is also doing some innovative instruction with iPods. Small world - I went to grad school with the historian listed who is doing some great things with iPods in her history courses.
